CONFETTI AND SPICE - ROYAL ICING.


  INGREDIENTS

  100g fresh egg whites or albumen solution (3 1/2 oz)
  600g icing sugar, sifted.

  DIRECTIONS

  Pour the egg whites or albumen solution into a bowl.(Kenwood Mixer)
  Slowly mix in a third of the icing sugar until dissolved.

 Then slowly mix in the remaining sugar. Run a spatula around the inside
 of the bowl to ensure all the ingredients are blended together.

 Thoroughly beat mixture until light and fluffy. Peaks should be formed
 when the spoon or beater is lifted.

 Clean down inside then cover with a damp cloth until required.

 15g pure albumen powder (1/2 oz)
 85g cold water(3 oz
